OK so HC and I are definitely pha lang. we made some of the red curry mixture last night that Aly brought back for us. sauted some fresh green beans, shallots and shrimps in the paste and put it over some noodles. no big deal right? wrong.
crying and sweating. nose running. many beer drinking. straight rum on ice to try to kill the heat. nothing worked. and to think, we only used one Tbsp.

nope, well, a little fish sauce i guess. next time, definitely some coconut milk. i didn't realize, i didn't know...
There is so much to know when it comes to the mystical curry. I, too, have much to learn.
